笼统的讲,不锈钢的抗方腐蚀性和含镍有关,镍含量越高,抗腐蚀性越好(但也不是绝对)。

食品工厂与食物接触的不锈钢多为304,含镍在8%以上,要求高的个别器具会用316L(含镍12%以上,医疗用手术刀就是)。

我过去一直认为可以以这个来判定不锈钢,后来到了食品机械加工行业后才发现,不锈钢的牌号非常多,各个国家和地区的标准也不尽相同,有日本标准、美国标准、德国标准、中国标准等等,经常说的201、304等用数字表示牌号的多为日标或美标(而同样是316L,日标和美标也不一样,一个要求含镍12%,一个要求10%)各个牌号除了含镍这个因素外,还和加工等工艺因素有关。
